I had this idea while sitting on the sofa watching Netflix and eating a pint of chocolate chip cookie dough ice cream one night.
All the cookie dough chunks seemed to be concentrated right in the middle so that’s where I kept scooping from. In the end I was left with a pint of ice cream that had a completely hollowed out center.
My desire to deep fry anything in sight kicked in immediately, and I began thinking about how wonderful it would be to fill the middle with chocolate syrup, cover the entire thing in panko breadcrumbs, and deep fried it to create a Deep Fried Ice Cream Lava Cake.
My initial intention was to use a complete pint of ice cream to create these, but I had no idea whether my concept would even work, so when I spotted some little tubs of ice cream at the grocery store that were approximately the size of a third of a pint for under $1 apiece, I felt they'd be ideal for my little experiment!
In the end, not only did the Deep Fried Ice Cream Lava Cakes taste fantastic, but the smaller tubs of ice cream were a far better idea in the first place because they're the ideal serving size for one person. I'm not opposed to eating a full pint of ice cream at once....
Deep Fried Ice Cream Lava Cake Recipe
Ice Cream Lava Cake
Ingredients
- 6 mini tubs (approximately 1/3 of a pint each) ice cream
- 1 bottle chocolate syrup
- 4 eggs
- 1/3 cup milk
- 4 cups panko breadcrumbs
- 2 quarts oil for frying
- Powdered sugar
Instructions
- Scoop out the centre of each ice cream tub, then fill with chocolate syrup and top with part of the ice cream you scooped out.
- Refreeze the ice cream containers for at least 30 minutes.
- Set up a dredging station with two bowls: one for panko breadcrumbs and the other for beaten eggs and milk.
- Cut off the edge of the ice cream tubs one by one with scissors to remove the ice cream.
- Dip the ice cream in the egg wash and then in the panko breadcrumbs. If required, repeat this process a second or third time.
- Freeze for at least another 30 minutes.
- Heat oil in deep fryer or heavy skillet to 375°F.
- Fry your Ice Cream Lava Cakes for 45 seconds per side, then dust with powdered sugar and serve immediately.
