Air Fryer Keto Chicken Nuggets


Take a look, Mom! I'm back to eating healthy! These chicken nuggets are not only produced in an air fryer, but they are also coated with mashed up pig rinds, which means they have no carbohydrates at all!

So, whether you're attempting to follow a low carb or keto diet, these chicken nuggets are ideal!


Dipping them in all the ranch dressing I use when I eat chicken nuggets definitely eliminates some — if not all — of the health advantages slightly, but it's all relative, right? This, a Big Mac Extra Value Meal from McDonald's, or a meat lover's pizza....



All kidding aside, these chicken nuggets were quite delicious. They would have been even better if I had deep fried them instead of air frying them, but that's the cost of eating healthily, I suppose....


I coated the chicken nuggets with cooking spray before air fried them, which I first attempted when I prepared my Flamin' Hot Cheetos Breaded Chicken Nuggets. You may turn them halfway through the air frying process if you want them extra crispier, but it isn't required. Just make sure you don't overcrowd the air fryer basket and that all of the chicken nuggets are in a single layer.

Air Fryer Keto Chicken Nuggets Recipe

Ingredients

  • 1 pound boneless skinless chicken breast
  • 2 eggs
  •  cup milk
  • 1 bag (5 ounces) pork rinds

Instructions

  • Preheat your air fryer to 400°F.
  • Cut chicken breast into 1 inch cubes.
  • Set up a dredging station with two dishes, one with crushed pork rinds and the other with eggs and milk.
  • Coat each piece of chicken with pork rinds, then dip in egg wash and coat again.
  • In your air fryer, arrange the chicken nuggets in a single layer, coat with cooking spray, and cook for 8 minutes, or until the internal temperature of the chicken reaches 165°F. You may need to cook them in two or more batches depending on the size of your air fryer.
  • You may turn them halfway through the frying process if you want them to be as crispy as possible, but as long as you coat them with cooking spray and don't overwhelm the air fryer basket by arranging them in a single layer, they get very crispy even without flipping.
  • Allow the nuggets to cool before serving with ranch or your favorite dipping sauce.
